Easy Aussie Pikelets

Otherwise known to the English as “drop scones” this batch makes about 30 small pikelets, perfect for afternoon teas and even lunch boxes.

In a bowl combine:

  • 2 eggs
  • 2 cups of self-raising flour (I use wholemeal but ordinary is fine)
  • 1 1/2 cups of milk
  • 2 tsp sugar

How ya make em:

  1. Mix thoroughly.
  2. Using a dessert spoon, scoop the mixture into 3 or 4 pikelets on a hot pan. Wait for the bubbles to rise to the surface and then flip to the other side (usually about 1 minute or so). Repeat until the mixture is finished.
  3. Enjoy with jam and cream! If you like you can add some frozen blueberries to the mix for something a little different.
