And yes the last part of the name of this recipe did in fact require capitals. 😉
This recipe is best made right before serving. It can be doubled or halved. This amount serves 3 small or 2 large. Seeing as though we try not to eat meat on Mondays we had it as is but you could easily add chopped ham, bacon, chicken, shallots, peas, spinach, sundried tomatoes or the like with great success. It also tastes great with tuna. 🙂
How ya do it:
- To a saucepan of boiling hot salted water, add 2 cups of macaroni.
- Cook for about 9 minutes and then drain, leaving about 1/2 cup of the leftover cooking water in the pan.
- Place cooked macaroni back in the pan with the water. To this add 1 cup grated cheese (whichever you have handy, we had cheddar) and 2 tablespoons of butter. Turn the pan on low and mix the ingredients together so the butter and cheese melts and what you’re left with is a deliciously saucy cheesy pasta.
- Take off the heat, sprinkle with crunchy bread crumbs, salt and a little extra cheese.
