Here’s a meal for lunch that you can bung together really un-gracefully but it’s quick and tasty and easy. I make this huge batch and then freeze it for lunches for my husband and keep the rest in a big bowl in the fridge for easy lunches for me and the girls.
How to make it:
- Boil 500g of wholemeal pasta or soba noodles according to the packet instructions. Drain and let cool and place into microwave safe bowl.
- Into bowl on top of the pasta add 420g drained tuna (we use the spring water type but a flavoured one would work well), 1 cup of grated cheese (frozen is easy), 1/4 cup of cream and 1 tin of pureed tomatoes (I use a stick mixer for this to make it quicker).
- Mix it all together very well, add some fresh parsley and a generous sprinkle of Italian Herbs and season well with salt and pepper.
- Place the bowl into a microwave and cook for 3 minutes so that the cheese is melted and tuna is hot.
- Mix thoroughly. Enjoy!
