Quick and Easy Tomato Tuna Pasta with Italian Herbs

Here’s a meal for lunch that you can bung together really un-gracefully but it’s quick and tasty and easy. I make this huge batch and then freeze it for lunches for my husband and keep the rest in a big bowl in the fridge for easy lunches for me and the girls.

How to make it:

  1. Boil 500g of wholemeal  pasta or soba noodles according to the packet instructions. Drain and let cool and place into microwave safe bowl.
  2. Into bowl on top of the pasta add 420g drained tuna (we use the spring water type but a flavoured one would work well), 1 cup of grated cheese (frozen is easy), 1/4 cup of cream and 1 tin of pureed tomatoes (I use a stick mixer for this to make it quicker).
  3. Mix it all together very well, add some fresh parsley and a generous sprinkle of Italian Herbs and season well with salt and pepper.
  4. Place the bowl into a microwave and cook for 3 minutes so that the cheese is melted and tuna is hot.
  5. Mix thoroughly. Enjoy!
